We have a client-server setup with postgres in the data layer.
Is there any common practice for cleaning up the infobase from documents, accumulation registers, etc?
The only way i can think is to manually delete everything from postgres but i dont know if this is safe.
Any ideas?

There are some practices:
1) If you need to make empty Infobase without any user data you should create configuration cf-file from your current postgres Infobase using Designer (Configuration -> Save Configuration to file). Then create empty 1C-infobase and load this file (Configuration -> Load Configuration command)
2) If you need to delete all the documents without removing information from catalogs you should use Data Processing to delete them. 1C-company has universal data processings for standard operations and they can be localized into English. Please note as a rule If you delete documents this operation deletes information from accumulation registers too.
